I had such high
hopes for these. I really did. I thought this recipe was going to end my “how
to secretly sneak veggies into the kids food” problem, without getting all
Jessica Seinfeld in the kitchen. I mean, who really has time for all that
pureeing? And chicken nuggets from
scratch? (I will give her some credit, though. Her chocolate chip cookies with
chick peas are amazing.)

And here’s how
mine turned out:
They were certainly easy to make. Shredding some zucchini, adding cheese,
quinoa and a few other things, and baking them in a mini muffin pan. Hers
definitely look more appetizing…with that golden crust, and their perfectly
uniform shapes. Mine, well, not so golden, and not so uniform.
But the real
test was in the taste.
Charlotte, who
is 6, took a couple of bites. I thought...Success! But soon after, the
little bites stopped.
“Don’t be
surprised if I don’t finish these, Mommy. I mean, I like them, a little, but
I’m sort of just getting used to them, you know?”
Chad didn’t even
touch them. I thought he might because he LOVES muffins. And I made sure he saw
me taking them out of the muffin pan. I think I even said “Muff-in?
Muff-in?” But no-go. Not one small bite. Not even a lick.
Hubby though,
came home from work and gobbled up about 15. He loved them! Just as the
bloggers husband did in her post. You don't feel bad about eating a bunch of them compared to those scrumptious, yet oh- so fattening mini quiches they serve at brunches and weddings. I could see these being cute appetizers for a luncheon, book club, etc.
I’m anxious to hear what my west coast
counterpart has to say, because I believe this recipe was in her weekend
rundown….
